Indian food is one of the most popular cuisines in the world. If you’re reading this, you will most probably find it quite easy to find a good Indian restaurant within the close vicinity. Given the scale of the country, Indian food encompasses an immense assortment of dishes, which are usually categorised as North Indian and South Indian food. Some dishes as Butter Chicken are famous the world over, but some cuisines are more of an acquired taste. According to Aungshuman Chakraborty, the executive chef of InterContinental Mauritius Resort Balaclava Fort, one of many a Beach Resort Mauritius has to offer, Punjabi cuisine is one such example. Chef Chakraborty explains that then inclusion of mustard flavours is a staple in Punjabi food, and recipes contain everything from mustard oil, to mustard seeds to mustard paste. Although these heavy flavours are a staple in India, they might not be as popular in big cities around the world.
